Preheat oven to 165°C/ 325°F. Grease a cake pan (22 cm/ 9 inches) with butter and set aside. 2. In a small saucepan, add the butter and brown sugar. Cook just long enough for the brown sugar to melt. Remove from the heat. 3. Pour the sauce in the bottom of the prepared cake pan, arrange the slices of mangoes over it and set aside. 4. In a medium bowl, stir together flour, baking powder, baking soda, and salt. Set this aside. 5. In a large bowl, using an electric mixer, beat the remaining 80 g of butter on high until light and fluffy. Add granulated sugar and beat until well combined. Beat in eggs, one at a time, scraping down bowl as needed. Beat in vanilla extract. 6. With the mixer on low, add the flour mixture alternating with the sour cream. Beat this just until well combined. 7. Using an offset spatula, spread the mixture evenly over the mangoes. Bake until cake is dark golden brown and a toothpick inserted in center comes out clean for about 45 - 50 minutes. Let cake cool in the cake pan for about 10 minutes. No longer! Run an offset spatula around the edge of the pan and invert cake onto a serving plate. Follow me on: https://www.instagram.com/meliannscakery/ for more pictures!
