This is the most requested recipe so I decided why not with salsa n dip too? So here is the recipe for you guys. Let's start with it. Preparation time 20.minutes. Cooking time 25 to 30 mins. Serves 2. ingredients for nachos dough:- 1/4th cup maize flour (makke ka aata) dry roasted. 1/4 th cup wheat flour. 2 tbsp maida. Salt to taste. 1/2 tsp ginger garlic juice. 1/2 tsp vinegar. Water to make dough. Substitute for jalapenos :- pickled chillies. 1 -1 red n green chill finely chopped. 2 tbsp vinegar. Salt to taste. For fresh Salsa :- 1 tomato finely chopped. 1/2 onion finely chopped. 2 tbsp. Boiled corns. Some fresh coriander leaves. 1 tbsp. Tomato ketchup. 1 green chilli finely chopped. 1/2 lemon juice. Salt to taste. For Cheese sauce :- 1 tbsp. Butter 1/2 tsp. Turmeric powder / haldi powder. 1 cup milk. 2 cubes or slices of cheese. Salt to taste 1tbsp. Corn starch n water to make its slurry. For nachos spice :- 1 tbsp. Whole coriander. 1 tbsp. Cuminseed. Salt to taste. 1 tbsp. Red chilli powder. 1/2 tsp oregano 1 tsp. Dried mango powder / amchur powder. Oil to deep.fry the nachos. Some fresh coriander leaves. Veg mayonise. Nachos spice. PROCEDURE:- For Nachos dough. In one bowl add roasted maize flour, maida and wheat flour, salt to taste, ginger-garlic juice, vinegar in a given quantity and combine well and add water slowly slowly n knead the tight dough and keep aside for 10 mins. After 10 mins knead the dough slightly and roll out roti and make wholes with fork so it won't puff then it will be crispy. We want flat nachos as they hold their crispyness for long time. Then all rotis have to half roast on tava n get it down so the nachos won't be sticky and remain stiff, till we fry it. Next is to make strips as shown in video and then cut it into triangles and deep fry it and keep aside. FOR Nachos spice :- In a above given proportion for nachos spice roast the coriander, cuminseed till golden for 1-2 mins then turn off the flame and add all rested ingredients n saute till few seconds and allow it to cool. Then grind the same in mixer into a fine powder. Keep aside. FOR pickled chillies (substitute for jalapenos) Chopp 1 -1 red n green chilli finely and add 2 tbsp vinegar n ltl salt to taste mix it and keep aside. FOR FRESH SALSA :- boil the corns n keep aside. Then chopp finely tomato n onion and green chillies, tomato ketchup, lemon juice, fresh coriander leaves salt to taste and last add the boiled corns. Keep aside. FOR CHEESE SAUCE :- In a sauce pan heat the butter add pinch of haldi saute it ltl then add milk let it become hot, then add cheese slices, salt and 1 tbsp corñflour with some room temperature milk n make slurry and add for thicken the sauce and stir continuously till gets thicken. After it done strain it properly and keep it aside for further use. Assembling of Nachos. Take one plate place the nachos and sprinkle the nacho spice that we made, then add pickled chilles to our fresh salsa and mix it then, place some fresh salsa on nachos, top up with veg mayonise spot like on some nachos. Then in a small bowl take some cheese sauce n sprinkle pinch of nachos spice on it and your Nachos with salsa & Cheese Sauce is ready to eat.
