Using a sharp paring knife, cut along the sides of the membrane to make segments easier to release after broiling. Sprinkle each half with brown sugar. Place on a baking sheet and broil for 2-3 minutes or until sugar becomes caramelized. Enjoy! Grapefruit & Avocado Salad For the salad: 1 grapefruit, cut into segments 1 avocado, pitted and sliced 4-6 cups arugula ¼ cup sunflower seeds For the dressing: 2 tbsp grapefruit juice, freshly squeezed 1 lime, juiced 2 tbsp honey 2 tbsp olive oil salt and pepper In a large bowl top arugula with grapefruit, avocado and sunflower seeds. In a small bowl whisk grapefruit juice, lime juice, honey, olive oil, salt and pepper. Pour over salad just before serving. Enjoy! Grapefruit Glazed Salmon ¾ cup grapefruit juice, freshly squeezed 2 tbsp brown sugar ½ tsp ginger, freshly grated ½ tsp red chili flakes 4 salmon fillets salt and pepper Preheat oven to 375°F. Place salmon filets on a baking sheet and season liberally with salt and pepper. Bake until salmon is cooked through. In the meantime, in a small saucepan combine grapefruit juice, brown sugar, ginger and red chili flakes. Simmer on medium heat until the mixture is reduced by two thirds. Carefully spoon mixture over cooked salmon filets and broil for about a minute. Finish with more glaze and chopped green onions.
