Located in the Burj Daman building in Dubai’s DIFC, Carnival is the little brother to Tresind, the boundary pushing Indian take on molecular gastronomy. But where the original is all about super-modern dishes served up in a slick fine-dining scene, Carnival calls itself ‘post-modern’ Indian food, with the whole experience being like a Bollywood remake of Willy Wonka. From the bronze trees, asymmetrical mirrors and toy merry-go-rounds in the centre of each table, the interior is an attempt to recreate a sort of magical wonderland…. And that’s before you even get to the menu. The ultra-popular 9-course tasting menu has dishes play about with names and ingredients that come served with a healthy portion of nostalgia. Popular dishes like ‘Life Is Short’, ‘Game of Corns’ and ‘Eat Dessert First’ , are inspired by the memories, games and experiences of the chefs, and then put together using traditional cooking methods. The chefs’ sense of passion is clearly infectious as the waiting staff gleefully tell you the story behind each course served.
