Risotto Rosso. Basic principles of risotto cooking.

Ingredients: 2 large beets 1 onion 5 cloves of garlic 250 ml Wine white / red, dry 1-1.5 L Vegetable Broth Rosemary 1 sprig 250-280 g Carnaroli / Arborio Rice 100 g Roquefort cheese Salt, sugar, freshly ground pepper Extra Virgin Olive Oil 80-100 g Butter 2 tbsp Apple / Wine Vinegar or Lemon Juice Risotto is a typical first course of Italian cuisine, originally from Veneto, and then spread throughout northern Italy and today is presented in numerous versions throughout the country. Its main feature is the creamy consistency of the dish, in which the rice remains grainy, filled with aromas and taste of the ingredients, broth, wine, herbs. It is very important to use special rice varieties suitable for making risotto, which contain a large amount of starch, retain their shape, increasing in size by 3-5 times (Arborio, Carnaroli, Baldo, Maratelli, Rosa Marchetti, Sant Andrea, Vialone Nano). If you use another rice, it will be anything, but not risotto! Other ingredients vary depending on the recipe; this dish has a wide range for culinary creativity! There are general, mandatory rules for making risotto: 1. preheating (frying) rice in a pan with oil. 2. slow cooking rice and ingredients, with the gradual addition of liquid (broth or juice, wine), necessary for absorption by rice grains, with constant monitoring of moisture balance.
