Carrot Cake: 2 cups all purpose flour 2 teaspoons baking soda 2 teaspoons cinnamon 1/2 teaspoon salt 3 lg eggs 2 cups sugar 3/4 oil 3/4 buttermilk 2 teaspoons vanilla 2 cups carrots (3 lg carrots) 13 oz sweetened flaked coconuts 1 cup pecans Directions: Stir first 4 ingredients Beat eggs & next 4 ingredients Add flour mixture Fold in carrots, pineapples and coconuts Bake 330 degrees for 25-30 minutes Cream cheese icing: 8 oz cream cheese 1 stick of margarine 1 tablespoons of clear vanilla 2lb bag of confectioners sugar(less or more depending on the thickness that you like) Directions: Mix cream cheese, margarine and vanilla Add in confectioners sugar Email: [email protected] P.O.Box📦 Jemonica Koger P.O.Box 91461 Mobile, Al 36691
