How to Plant Asparagus Asparagus may very well be one of my favorite fresh vegetables to eat. When cut fresh from the garden it is very crisp and succulent. It is unrivaled by store bought asparagus. There are some planting tips and tricks however. It is sensitive to the roots being above the crown since it has long roots when you plant it. Make hole and the put a baseball size mound of dirt in the middle. Place the crown on the mound, and spread the roots out in the hole. Cover with dirt/compost and water in. Done! I had read somewhere that this type of asparagus (Mary Washington I think) would not perform well in the south, but I've had no problems. Granted its the only asparagus I've grown, so I don't have anything to compare to. Because it is sensitive to wet feet, I would highly advise planting in a raised bed as I do.
