PINEAPPLE BUNS Hongkong style
A pineapple bun is a kind of sweet bun predominantly popular in Hong Kong and also common in Chinatowns worldwide. Despite the name, it does not traditionally contain pineapple; rather, the name refers to the look of the characteristic topping (which resembles the texture of a pineapple). Here's what you'll need: FOR THE DOUGH: 1 CUP MILK (250ML) 1/4 CUP MILK POWDER (25G) 3 TBSP SUGAR (45G) 1 LARGE EGG 2 TSP INSTANT YEAST (6G) 3&¼ CUP BREAD FLOUR (410G) ¾ TSP SALT (3G) 3 TBSP BUTTER (36G) FOR THE TOPPING: 1/4 CUP BUTTER (55G) 1/2 CUP SUGAR (100G) 1 TSP VANILLA 1 EGG YOLK ½ TSP SALT ¼ CUP MILK POWDER (25G) 1 CUP CAKE FLOUR (100G) ¼ TSP BAKING SODA ¼ TSP BAKING POWDER Eggwash: MIX 1 EGG YOLK AND 1 TBSP MILK 1. For the dough: Mix milk, milk powder, sugar, egg and yeast. Add flour and salt. Mix until the dough forms. 2. Add butter and knead until smooth. Form into a ball. Coat with oil. Place in a bowl and cover for 1 hour or until doubled in size. 3. For the topping: Cream together sugar and butter until smooth. Add egg yolk, vanilla and salt. Mix until smooth. Sift in- milk powder, cake flour, baking soda and baking powder. Mix and wrap in a plastic wrap and form into a log. Refrigerate for 30 minutes to firm up. 4. Back to the dough: Press the air out. Transfer to a floured counter then divide into 12 equal portions. You can use a kitchen scale too. 5. Place in a 9x13 baking pan. Cover for 30 minutes to proof. 6. Preheat oven at this time: 170℃ OR 340℉ (CONVECTION) 7. Remove topping from plastic wrap then divide into 12 equal pieces. Press flat between plastic wrap. Roll about the size to cover buns. 8. Beat egg yolk and milk for egg wash. Brush on top of prepared buns. 9. Bake for 15 minutes or until golden. 10. Let it cool down. 11. Serve and enjoy! Food for the soul: Psalms 19:1.
