How to make Gluten Free Penne with caramelised red onions, cherry tomatoes & pine nuts. Ingredients for 6 people: 1 box Barilla Gluten Free Penne 2 punnets cherry tomatoes 4 tablespoons Extra Virgin Olive Oil Salt and black pepper to taste 1 cup red onion, thinly sliced 1 tablespoon parsley, chopped ¼ cup Pecorino cheese, grated ¼ cup pine nuts, toasted Method: 1. Pre-heat the oven to 200°C and bring a large pot of water to a boil. 2. Toss the cherry tomatoes in 2 tablespoons of olive oil and season with salt and pepper. Place on a baking tray and roast in pre-heated oven until blistering and browned. 3. Meanwhile, in a skillet or large pan, caramelize the onions in 2 tablespoons of olive oil, season with salt and pepper, and cook over medium heat for about 10 minutes. Then, add the blistered tomatoes to the onions. 4. Once the water is boiling, cook the Penne according to instructions on the pack. Drain and reserve 1 cup of pasta water. 5. Toss the pasta in the sauce, adding some of the pasta water to emulsify and combine the sauce. Remove from the heat and add the parsley, cheese and pine nuts. Buon appetito! Stay in touch!
