The goal is to find winter squash that can be eaten during the green stage as a replacement for summer squash- ripe, many of them will serve well as a pumpkin replacement. Squash vine borers love to tear through our squash patches, and it's time that we "squash" this highly destructive pest's plans. This is the year of squash a'plenty! The traditional pumpkin is watery and stringy, which oddly enough means that it is actually a subpar option for classic pumpkin desserts! isn't that strange??
