You need:
1.5 kg Pork neck (or Lamb meat) = 3.3 lbs Pork neck
1.5 kg Taro root = 3.3 lbs Taro root
2 peppers
1 celery
3 onions
0.5 Liters tomato juice = 16.9 fl oz tomato juice
1 Parsley
3 cloves garlic
Instructions:
Peel and chop the taro root into chunks. Set aside.
Chop the peppers, celery, onions, and parsley. Mince the garlic cloves.
In a large pot, layer the chopped vegetables starting with the onions, celery, peppers, and minced garlic.
Place the pork neck on top of the vegetables in the pot.
Pour the tomato juice over the pork and vegetables.
Cover the pot with a lid and bring it to a simmer over medium heat.
Once simmering, reduce the heat to low and let it cook for 4 hours, allowing the flavors to meld and the pork to become tender.
After 4 hours, remove the lid and check that the pork is cooked through and tender.
Serve the cooked kolokasi with couscous on the side as an extra, and garnish with chopped parsley if desired.
